Man Ho (萬豪), the signature Cantonese restaurant of Marriott International, recently opened its newest branch at the lavish West Wing of Marriott Hotel Manila. Positioned to become one of the top Chinese fine dining destinations in the Philippine capital, this premier restaurant serves both classic and modern Cantonese dishes prepared by no less than the hotel's Executive Chinese Chef, Chef Law Wui Wing.

Conveniently located on the ground floor of the hotel's west wing, the restaurant is easily accessible from the Marriott Hotel Manila's main lobby through the newly built sky bridge which connects the hotel to the West Wing and to the Marriott Grand Ballroom.

The beautiful mix of traditional and contemporary dishes served at Man Ho is also expressed in the elegant design of the restaurant's interior featuring a wooden floor, modern carpeting, marble-lined walls, Chinese-inspired wooden panels, and terracotta sculptures. I also love the floor-to-ceiling glass windows which do not only allow natural light to illuminate the spacious dining hall, but also provides dining guests with a spectacular view of the adjacent golf course.

Joining us was the Director of Marketing of Communications of Marriott Hotel Manila, Ms. Michelle Garcia, and some of our industry friends from print and digital media.

We also got the chance to interview Chef Law. A native of Hong Kong, Chef Law has extensive culinary experience in some of the best restaurants in Hong Kong, Japan and China where he worked as Executive Chinese Chef at JW Marriott Hotel Shanghai, Beijing Marriott Hotel City Wall and Marriott China Hotel in Guangzhou.

Chef Law also shared that most of the ingredients he uses in his cooking were imported from Hong Kong and China as he didn't want to compromise the quality and the authenticity of the taste of his dishes.

We started our lunch with an assortment of appetizers, from the simplest Japanese Cucumber served fresh, crunchy and sweet, to the finest Smoked Pampano with its well-balanced sweetness and saltiness.

No Cantonese dining is complete without dim sum of which Man Ho has a great selection. During our lunch, we were able to sample three of the specialty dim sums by Man Ho's Dim Sum Chef, Chef Du Wen Bo who was a colleague of Chef Law at Beijing Marriott Hotel City Wall.

It is worth mentioning that here at Man Ho, dim sum dishes are prepared upon ordering to ensure the freshness and premium quality of the dishes. Dim Sum is best enjoyed steaming hot that is why we recommend that you immediately eat them upon serving on your table.

Some of the dim sum dishes we tried were the Steamed Chicken Feet, which are very tender and easy to chew on, the Har Gao which are filled with the freshest plump shrimps, and the Siao Mai which are compact and rich with pork and shrimp flavors. All of these were served with chili paste on the side.

One of my favorite Hong Kong dishes is the Roast Goose and if you are a fan of this dish like I am, you will be pleased to know that Man Ho is one of the very few, if not the only, Chinese restaurants in Manila which served this dish. Chef Law said that all the geese they used to prepare this specialty dish were imported from Hong Kong.

The final result is an authentic Hong Kong-style Roasted Goose with very tender meat and super crispy skin, and in between is a thin layer of goose fat which gives all the savory goodness to the dish. It is then served with plum sauce on the side. This is dish has so much flavor that it is best served with steamed rice as well.

Next to be served was the Seafood Soup with Tofu and Caviar. Again, this soup is best enjoyed while still warm. The soup itself has a very light seafood flavor which is very comforting to the senses. The tofu was very delicate and was in perfect contrast to the plump shrimps of the soup.

If you are not into seafood, then you will surely love the Beef Tenderloin with Bell Pepper in Black Pepper Sauce. The beef chunks are very tender while the black pepper sauce was not too overpowering that you could still taste the natural taste of the beef. The dish is served with the freshest onions, bell peppers, and shiitake mushroom.

We were all served with our individual cups of Fried Rice with Beef and Egg White. Just like the other dishes, this fried rice is not overpowered with flavors. It's has a very light taste, not salty nor oily, which makes it a perfect pair for any savory dishes.

Another soup dish was served, this time it was the Poached Boneless Wild Pink Garoupa with Pumpkin Sauce. Chef Law said that he prefers hand caught wild garoupa because they are more flavorful compared to commercially grown garoupa. It had a lightly creamy soup base while the fish had a firm consistency and is packed with seafood goodness.

After all the savory dishes from the appetizers, to the dim sum, soups, and mains, it was nice to have the Asparagus with Fresh Crab Meat Sauce as the last dish. It was light yet it still has that simple Cantonese seafood goodness from the crab meat. The asparagus was very fresh, crunchy and sweet to the taste.

Finally, for dessert, we had the Western Dessert Combination which actually makes sense because dessert is actually a Western dining concept. The set included a Molten Lava Cake and Ice Cream. If you prefer a Chinese-inspired dessert, you can opt for the Buchi Stuffed with Ferrero Rocher or the Sweetened Almond Cream.

We definitely had an excellent Chinese fine dining experience here at Man Ho and we are excited to come back and try the other dishes from their menu. We were told that a lot of Filpino-Chinese families have already booked most of the private dining rooms for December and January of next year, so if you plan to dine at Man Ho, we recommend that you make prior reservation.

During our visit, we also had the chance to take a tour of the newly opened West Wing. Here is a preview of the luxurious Premium Room, the lead-in room category at the West Wing. It measures 46sqm and features a very comfortable bed and state-of-the-art in-room entertainment amenities.

If you plan to Book a Room at the West Wing, you will have to wait until January 2017 as the whole West Wing is already fully booked this December because of various corporate events happening at Marriott Hotel Manila.
