Red Spice is a casual dining restaurant at Okada Manila serving traditional Cantonese, Chaozhou (Teochew), and other regional Chinese cuisines. Red Spice is headed by Chef Chung Wai Lau who is a native of Hong Kong.

From the A La Carte Menu
Red Spice launched a new menu in December 2021 and here are some of the dishes we have tried in our multiple visits to the restaurant:
Pork with Shrimp Roe Dumpling (Siu Mai) - The quality is very similar to the siu mai served in many dim sum restaurants in Hong Kong.
Shrimp and Bamboo Shoots Dumpling (Har Gow) - Plum and juicy shrimps were encased in translucent yet firm dumpling wrappers expertly pleated by the restaurant's dim sum chefs.
Steamed Chaozhou Dumpling (Fun Guo) - This steamed dumpling is filled with ground pork, dried shrimp, chopped mushrooms, nuts, radish, and chives. It uses a dumpling wrapper similar to har gow but with a different style of pleating.
Marinated Bean Curd and Egg - Tofu and hardboiled eggs are marinated in soy sauce and five-spice and then braised for hours. They are then sliced and served with marinated peanuts. This is a very popular appetizer in Chaozhou cuisine and can also be eaten with congee.
Beef Tendon Noodle Soup - Egg noodles in a rich beef broth served with chunks of beef meat and beef tendon that would just melt in your mouth. The portion size is quite generous, making this a complete meal on its own.
Huizhou-Style Three Treasure Soup with Preserved Cabbage - This soup dish comes with fishballs, beefballs, and meatballs served in a clear chicken broth with preserved cabbage and bokchoy. This dish is popular in Cantonese, Chaozhou, and Fujianese cuisines.
Hong Kong-Style Crispy Roasted Pork Belly Rice Topping (Siu Yuk) - Slices of crispy roasted pork belly are served on a bed of steamed rice and drizzled with aromatic soy broth. The crispy roasted pork belly was very tender and flavorful while the fat would just melt in your mouth.
Red Spice Crispy Fried Rice - This is the signature fried rice of Red Spice. It is aromatic and slightly spicy. I love the contrast of textures of the rice, crunchy on the outside and soft in the core. The fried rice is served with salmon sashimi on the side. I recommend soaking the salmon in soy sauce to enhance its umami. The portion size is good for two to three persons.
Wok-Fried Prawns with Salted Duck Egg Yolk - Medium-sized prawns are wok-fried until crispy and are then coated with salted egg yolk sauce. This premium dish by Red Spice is a must-try.
Mango Pomelo Sago Sweet Soup - I like the well-balanced creaminess from the coconut milk and sweetness from the mango, while bits of pomelo added texture to the dessert. The mildly tart taste of this dessert is very refreshing.

Red Spice launched a new menu in December 2021 and we have have dined here multiple times before Christmas. All dishes we tried were excellent and reasonably priced. Portion size of the dishes was generous. Great value for money.
ReplyDeleteFortunately Red Spice is open 24 hours. We dined after midnight to avoid the crazy traffic in Metro Manila during the holiday season.
There is so much more dishes to try. I am particularly eager to sample more Chaozhou dishes since this cuisine is seldom showcased by Chinese restaurants in Manila.
