Shang Palace (香宫) is the premier Chinese restaurant of Shangri-La Hotel Guilin serving Cantonese, Hunanese, Chuanese, and Guilin cuisines expertly prepared by the restaurant's culinary team. Dishes are made with fresh ingredients and prepared using traditional Chinese cooking techniques.
During my trip to Guilin, we arrived at Shangri-La Hotel Guilin a little bit too early for check-in so we decided to have lunch first at Shang Palace. Here are some of the Cantonese and Guilin specialties we ordered.
From the Dim Sum Menu
First to be served were the Steamed Shrimp Dumplings (har gow). The skin was thin enough that you could see the shrimps inside the dumplings, yet the skin was thick enough so that it won't be easily punctured by your chopsticks. Although Guilin is located inland, it still enjoys an abundant supply of fresh seafood from the coastal areas of Guangdong and Guangxi.
Here at Shang Palace, you are guaranteed that only authentic and top-quality Steamed Pork Ribs (pai guat) are served. The ribs were perfectly steamed that a layer of melted collagen will separate the meat from the bone. This makes the meat fall off the bone. The meat was tender, moist, and full of umami goodness.
The Steamed Rice Noodles Rolls (chang fen) is a must-order here at Shang Palace. Only Cantonese dim sum chefs can perfect the delicate texture of the rice noodle sheets and the addicting taste of the sweet soy sauce. This dish is available with shrimp, pork, and beef filling. We ordered the version with pork.
The Steamed Red Rice Rolls with Shrimp is a specialty Cantonese dim sum dish in Guangdong and Hong Kong that is also served here at Shang Palace, Shangri-La Hotel Guilin. It is a fried spring roll stuffed with shrimp and then wrapped with steamed red rice noodle sheets. It is best dipped in sweet soy sauce. I also love the contrast of the textures.
From the A La Carte Menu
The Roast Duck here at Shang Palace is made in-house in the traditional Cantonese way. The roast duck was chopped into smaller pieces and the roast duck dripping was poured over it. It was served with a plum sauce dip. The meat was very tender and the sauce was very flavorful. This goes well with steamed rice.
The Roasted Pork Belly (siu yuk) had a very crispy skin and the meat was tender and flavorful. The quality is consistent with the roasted pork belly I tried at the Shang Palace of Kowloon Shangri-La Hong Kong. I prefer to enjoy this dish on its own, but it is also common to dip it in white sugar, soy sauce, or hoisin sauce.
The Guilin Rice Noodles (Guilin Mifen) is a Guilin local delicacy featured in the a la carte menu of Shang Palace. It is a rice noodle dish with a light broth mixed with herbs and spices. The dish is then topped with slices of meat and sprinkled with chopped scallions and peanuts.I prefer to add some chili paste to the dish.
I ordered my favorite Mango Sago with Pomelo for dessert. This one served here at Shang Palace, Shangri-La Hotel Guilin has bits of pomelo and slices of strawberry for added color. It was sweet, tart, and refreshing and can cleanse any lingering savory flavors from the mouth.
