Pool House is the outdoor restaurant located on the pool deck of Grand Hyatt Manila. The restaurant has both shaded and open-air dining areas. Poolside gazebos are also available for guests looking for an intimate dining setting. Pool House serves international cuisine and specializes in grilled meats and barbecues.

The weather was exceptionally good when we visited Pool House and so we opted to be seated at the open-air dining area. The golden sunset and the cool afternoon breeze reminded me of the sunset sessions I had in Seminyak. To complement the Bali vibe, we ordered Nasi Goreng that afternoon.
Let me highlight that the Nasi Goreng tasted very authentic because it was made by no less than Grand Hyatt Manila's Chef de Cuisine, Chef Untung Taurat, a native Indonesian and former Executive Sous Chef and Assistant Director of Food and Beverage at the Grand Hyatt Bali.
Weekend Barbecue Menu
Pool House also offers a Weekend Barbecue Menu that features a variety of premium seafood and meats served fresh from the grill. All items are served with Chef's Salad, Potato Salad, Tomato Salad, as well as Chimichurri Sauce, Barbecue Sauce, and Salsa Verde. Guests can then pair the dishes with local and international beer brands, cocktails, and wines.
Below is the Barbecue Menu as of my recent visit. Items are reasonably priced and generously portioned. I suggest that you check the seafood and meat displayed at the grilling station before order. The staff can also help you in ordering the number of portions suited for your group.

Serving time is between 15-30 minutes depending on how busy the restaurant is. All the prices above are already inclusive of government taxes and 10% service charge.
If you are dining as a group, I suggest that you order the Nasi Goreng which can be shared by 2-3 persons. You can then order items from the Barbecue Menu. As mentioned earlier, all items from the Barbecue Menu also come with Chef's Salad, Potato Salad, and Tomato Salad.
Above is a platter of grilled tiger prawns, squid, and chicken thighs. All three went well with the Chimichurri Sauce. If you love spicy food, you will definitely love the Sambal Sauce that comes with the Nasi Goreng.
No sunset session is complete without booze. You can order your drinks from the wait staff but I recommend ordering from the cocktail cart. Grand Hyatt Manila's talented bartenders will whip up your favorite cocktails right next to your table. A separate wine menu is also available.
The Weekend Barbecue Menu is available every Friday, Saturday, and Sunday from 5:00pm to 8:00pm. Guests can stay until 9:00pm to enjoy their drinks.
Venue & Service
I have stayed and dined at the Grand Hyatt Manila multiple times already but I never considered dining here at Pool House until only recently when dine-in was not allowed due to the Enhanced Community Quarantine (ECQ). So I would say that this dining experience was a pleasant discovery for me.
I really loved the wide-open space and the cool afternoon and evening breeze. I also find the venue very romantic especially during sunset when the sky turns gold, pink, and purple. The live acoustic music also added an intimate vibe. I do hope that they can also invite a DJ to play ambient, lounge, and chillout music.
Service was excellent. The staff was very attentive and efficient. Overall, I am very satisfied with my fine dining experience here at the Pool House and I am looking forward to visiting again soon.
