Hidemasa at City of Dreams Manila

Hidemasa is a Japanese restaurant located in City of Dreams Manila that specializes in regional ramen dishes. The multi-disciplinary restaurant's menu also includes a variety of yakitori, tempura, sashimi, and sushi rolls. Hidemasa by Hide Yamamoto originally opened in Macau and now has branches in Singapore and Manila.

Hidemasa is located on the second floor of City of Dreams Manila and is easily accessible from Hyatt Regency. The restaurant has a spacious dining area with tables that can accommodate solo diners and groups. There is also a dedicated yakitori theater kitchen and a sushi bar.

The dishes are reasonably affordable with the ramen ranging from ₱420 to ₱460. The staff is also very knowledgeable about the menu and was able to provide relevant recommendations. Below are the dishes we tried during our recent visit.

Sapporo Miso Ramen by Hidemasa at City of Dreams Manila

Sapporo Miso Ramen (₱460) - The broth was thick and umami-rich with generous portions of chashu and ajitsuke tamago. The ramen was also topped with buttered corn which added more depth and sweetness to the broth.

Tan Tan Men Ramen by Hidemasa at City of Dreams Manila

Tan Tan Men Ramen (₱460) - The broth was thick and had a well-balanced spiciness and creaminess. I also loved the fragrance and flavor of the sesame paste in the broth. The ramen was generously topped with minced pork.

Hokkaido Shio Ramen by Hidemasa at City of Dreams Manila

Hokkaido Shio Ramen (₱420) - This shio ramen has a light broth with a delicate umami taste. It is also served with chashu and ajitsuke tamago and topped with chopped leeks and bean sprouts.

Tokyo Shoyu Ramen by Hidemasa at City of Dreams Manila

Tokyo Shoyu Ramen (₱420) - The broth was light but with extra depth of flavor coming from the soy sauce soup base. It is served with chashu and ajitsuke tamago and topped with chopped leeks and sliced fermented bamboo shoots. The ramen is also seasoned with freshly crushed black sesame seeds which added a hint of sweetness and a layer of mild nutty flavor to the broth.

Shrimp Tempura by Hidemasa at City of Dreams Manila

Ebi Tempura (₱195) - Comes in three pieces, the ebi tempura is made of medium-size shrimps that tasted fresh and sweet. The batter was crispy and not oily. The tempura dip has well-balanced saltiness and sweetness and comes with grated daikon on the side.

Pork Gyoza by Hidemasa at City of Dreams Manila

Pork Gyoza (₱195) - The gyoza was generously filled with minced pork and the gyoza skin was firm enough to hold its shape while soft enough to the bite. This is one of the best gyozas we tried here in Manila. Great value for money as well.

Yakitori by Hidemasa at City of Dreams Manila

From the yakitori menu, we chose the classic Asuparabekon bacon with asparagus (₱100 per stick), Piman bacon-wrapped green pepper and cheese (₱120 per stick), and the Lechon Butabara pork belly (₱120 per stick).

Salmon Roll by Hidemasa at City of Dreams Manila

The Yamapeño Salmon Roll (₱580 for 8pcs) is the classic salmon sushi roll which is topped with tempura battered yamapeño chilis. These spicy sushi rolls are best paired with Kirin Ichiban Beer (₱235).

Surf n Turf Roll by Hidemasa at City of Dreams Manila

The Surf 'n' Turf Roll (₱640 for 8pcs) is stuffed with shrimp and topped with beef. The tartness of the mango slices balances all the flavors. These savory and lightly sweet rolls are best paired with Aka Kirishima Sochu (₱350).

Black Sesame Ice Crea by Hidemasa at City of Dreams Manila

The Black Sesame Ice Cream (₱140) is served with red bean and kinako powder. This is a recommended dessert after eating spicy dishes such as the Tan Tan Men Ramen.

Matcha Tiramisu by Hidemasa at City of Dreams Manila

The Matcha Tiramisu (₱280) is the best-selling dessert of the restaurant. I love the bitter and sweet taste of the matcha-soaked dessert, bringing back memories of my Kyoto trip in every bite.



We will definitely dine here again on our next visit to City of Dreams Manila so we can try the two other ramen options, as well as the tempura and sashimi offerings.

  1. We did come back here at Hidemasa last December 6, 2021 to try the Hokkaido Shio Ramen and the Tokyo Shoyu Ramen. So far, we tried all their four ramen flavor and my top favorite is the Tan Tan Men Ramen and the Tokyo Shoyu Ramen for the non-spicy variant. We also ordered ebi tempura and pork gyoza. Food quality and service were consistently excellent.

    We visited between 12:00 noon and 1:00pm and the place was quite busy for a Monday. The staff told us that it even gets busier at dinner time. If you want to avoid the crowd, the best time to visit is between 2PM and 5PM.
