1. Tempura
Available as Ebi Tempura (6 pcs) and Tempura Moriawase (8 pcs assorted). Shrimps and vegetables are deep-fried at specific temperatures to ensure the top quality of the tempura. The dish is then served with a wedge of lemon and grated daikon. I personally prefer the tempura with just dipping salt.
2. Tamago Yaki
Tamago Yaki is freshly made when ordered by customers. This is to create the perfect silky texture. The Tamago Yaki has a mild sweetness that doesn't overpower the umami of the egg.
3. Gindara Saikyo Yaki
Slices of black cod are marinated in Saikyo miso imported from Kyoto, Japan for two days so that the meat will absorb all the flavors of the sweet white miso and other seasonings. The fish is then grilled until the fats melt and the miso paste caramelizes. The resulting taste is a well-balanced mix of sweetness, creaminess, and umami.
4. Cold Green Tea Soba
Originally a summertime dish, cold soba is now enjoyed by Japanese people all year round. Yamazato uses green tea soba (cha soba in Japanese) which is a type of buckwheat noodles infused with green tea. Cold Green Tea Soba is served with a dipping sauce on the side. Scallion and wasabi are added to the dipping sauce to your preference. The dish also comes with tofu and nameko mushrooms.
5. Buta Kakuni
This is a Yamazato signature dish. The pork belly is braised for 12 hours until the meat is super tender. Buta Kakuni is served with taro, spinach, and carrot in a soy-based broth with well-balanced saltiness and sweetness. This dish goes well with steamed rice.
6. Salmon Teriyaki
Salmon slices are pan-seared to lock in the juices and flavor of the fish. Teriyaki sauce is then added to the pan. Cooking continues until the fish is firmer and the teriyaki sauce thickens. Once done, the salmon will be coated with a shiny teriyaki glaze. The sweetness of the teriyaki sauce compliments the natural sweetness and creaminess of the salmon.
7. Chicken Teriyaki
Chicken thigh is marinated and then pan-seared until the skin is golden brown. Teriyaki sauce is then added to the pan and reduced until thick. Once cooked and covered with a thick teriyaki glaze, the chicken is then sliced and served.
8. Wagyu Sirloin Tobanyaki
This is a premium dish made with Japanese A4 Wagyu beef from Saga prefecture. The beef is grilled on a ceramic plate with a special sauce. This goes perfectly well with steamed rice.
9. Wagyu Sukiyaki
Another premium dish made with Japanese A4 Wagyu beef from Saga prefecture. This time, the beef is simmered in a special sukiyaki sauce together with tofu, mushrooms, spinach, and carrot.
10. Seasonal Mini Kaiseki
Kaiseki is a Japanese multi-course meal that uses fresh seasonal ingredients. Considered in Japan as the top fine dining cuisine, kaiseki is a culinary art form that is mastered by a professionally trained chef. Presentation is also part of the overall fine dining experience. Here at Yamazato, kaiseki dishes are served in intricately designed Arita ware imported from Japan.
