UMU is the specialty Japanese restaurant of Dusit Thani Manila. This fine dining restaurant serves a wide selection of classic Japanese dishes including sashimi, sushi, tempura, yakimono, teppanyaki, nabemono, donburi, and noodle dishes.

Dining Areas
The main dining area of UMU is designed in classic Japanese aesthetic with the combination of black tiles and wood. The furniture and lighting fixtures add a contemporary vibe to the space. Tables are customizable to accommodate couples and groups of diners.
At the center of the main dining area is a sushi station where guests can choose to be seated and watch UMU's sushi chefs in action.
Reminiscent of the corridors found in traditional Japanese houses, this hallway leads to another common dining space and private dining rooms.
Here is one of the three private dining rooms with a view of the hotel's Japanese garden. This one can accommodate twelve persons. The other private dining rooms can accommodate eight and four persons, respectively.
Guests who will be ordering from the teppanyaki menu may choose to have their dishes served at the main dining area or book one of the teppanyaki live-cooking stations for a consumable fee. Each teppanyaki station can seat up to six people.
Lastly, UMU also features an al fresco dining area surrounded by a Japanese garden and koi pond. Tables here can accommodate couples and small groups of diners.
Unagi Gozen
Unagi Gozen is one of the set menus offered by UMU. Set menus are perfect for solo diners or couples since most of the dishes at UMU are for group sharing. The Unagi Gozen includes grilled eel on rice, two kinds of sashimi, chawan mushi (egg custard), salad, miso soup, pickles, and dessert.
I started with the chawan mushi which is a savory egg custard dish that contains mushrooms. It was served hot which made it a very comforting appetizer.
Here are the maguro sashimi (tuna) and shake sashimi (salmon) included in the set meal. Both tasted fresh and naturally sweet.
No Japanese meal is complete without miso soup. This one includes wakame seaweed and aburaage (Japanese deep-fried tofu pouch) instead of soft tofu.
Here is a salad of greens, carrots, kani (crab sticks), and a savory-sweet salad dressing. The citrusy flavor of the salad was very refreshing that heightened my appetite for the main dish.
Unaju is the main dish of unagi (grilled eel) served on a bed of rice. The unagi was silky in texture and had its signature smokey-sweet taste. Three pieces of the grilled eel were served on a bed of steamed Japanese rice.
For dessert, they served me a scoop of ube ice cream. I am not sure if you can ask for a different ice cream flavor as I was not given the option to choose. I would have preferred matcha ice cream or black sesame seeds ice cream.
Sake Cocktails
Sake Sour - This is a refreshing drink of sake mixed with yuzu juice and calamansi puree. It has well-balanced sweetness and zest with hints of bitterness. I recommend this if you order seafood dishes.
Matcha Sake - This cocktail includes sake, kahlua, matcha, cream, and syrup. It's like a matcha latte with a hint of coffee. It is on the sweet and creamy side which makes it a dessert cocktail.
