The Arabic Dinner Buffet is an ongoing buffet offering at Ridge Café, the all-day dining restaurant of Timberland Highlands Resort. It is currently available every Saturday from 6:00pm to 9:00pm. The restaurant has an indoor dining space as well as an alfresco dining area with panoramic views of the Metro Manila cityscape.
Dishes are prepared by Chef Ranuka Hettiarachchi, the Executive Chef at Timberland Highlands Resort. Chef Ranuka is originally from Sri Lanka with years of experience in hotels and resorts in the Maldives, the Middle East, and the Philippines.

Highlights & Must-Try Dishes
Below are the dishes that you should try. Note that some dishes are part of a rotation menu and may not be available on your day of visit.
- Appetizer - pita bread, hummus, mutabal
- Mains - chicken biryani, samosa, kebab, mixed grilled seafood, tofu tikka masala, beef kofta stew
- Carving - chicken shawarma, roasted beef, roasted leg of lamb
- Dessert - basbousa, gulab jamun
I started my meal with assorted salad. My favorite was the shirazi salad, an Iranian salad with fresh cucumber, tomato, onion, and bell peppers. I also had pita bread which went well with the hummus.
This plate includes chicken biryani, roast beef, roast lamb, and chicken shawarma. The biryani was very fragrant and not spicy at all. The chicken was very flavorful, moist, and tender. The beef and the lamb were not gamey. The vegetable side dish that came with the shawarma also went well with all the dishes in this plate.
I couldn't get enough of the chicken biryani that I had another serving of it together with chicken kebab, tofu tikka masala, and beef kofta stew. The Tofu Tikka Masala was a pleasant surprise. The creamy sauce of the beef kofta stew also went well with the biryani.
This plate includes Arabian baked pasta and assorted grilled seafood. The pasta was loaded with olives and feta cheese, complementing the taste of the grilled prawns and mussels.
The dessert station includes Western and Middle Eastern options. Here I tried the cheesecake and the opera cake. The quality was fairly good.
My favorite dessert is the gulab jamun. This is actually an Indian dessert that has become very popular in the Middle East. The taste is very festive because it reminds me of Diwali Festival.
This Arabic Mint Tea is not officially part of the buffet but it was offered as a pass-around drink during our visit. It is a mixture of black tea and fresh mint.
