The Verona Brunch Club is an upscale Sunday brunch offered at Ristorante di Verona, the specialty Italian restaurant of Swissôtel Clark. The Verona Brunch Club features a specially curated menu from which diners can order unlimited servings of dishes. Food is prepared a la minute and served freshly cooked.

Highlights & Must-Try Dishes
The serving size of the dishes is mostly good for one to two persons. This depends on the variety of dishes you will order. During our visit, we skipped the usual brunch items we can find elsewhere and ordered dishes that stood out. Here are the must-try dishes from the brunch menu:
- Oyster Bar: they use premium La Boudeusse oysters from France, the Baked Cheese was the best
- Brunch Classics: go for the eggs benedict
- Appetizer: order the beef carpaccio
- Salad: the seafood salad was excellent
- Soup: we enjoyed both the mushroom soup and seafood soup
- Pasta: the gnocchi and the lasagna were my top choices
- Risotto: the mushroom risotto and seafood risotto were equally good
- Mini Pizza: the 4-Formaggi is my favorite
- Mains: great selections, the beef tenderloin is on top of my list
- Dessert: try the mascarpone cheesecake and the swiss chocolate
Oysters Baked with Cheese - the molten cheese has a creamy and buttery taste, and the umami of the oyster was enhanced by the saltiness of the cheese
Oysters Rockefeller - I loved the buttery taste and its combination with the spinach, I think they needed more time inside the oven to create that golden crust
Fresh Oysters - the best way to enjoy these fresh oysters is with freshly squeezed lemon and mignonette sauce, you can also add some hot sauce if you prefer
Waffle - classic waffle that is crunchy on the outside and moist on the inside, topped with cream and fruits, drizzled strawberry compote
Eggs Benedict - an extra special eggs benedict that is made with prosciutto di San Daniele from San Daniele del Friuli in Italy
Beef Carpaccio - your Sunday brunch can't be more Italian without carpaccio, the thinly sliced beef was drizzled with cocktail sauce and balsamic lemon reduction, and finally topped with crispy parmesan cheese and pine nuts
Seafood Salad - this classic Italian salad, locally called Insalata di Mare, is a popular appetizer made with mixed cooked seafood seasoned with lemon and olive oil
Mushroom Soup - a comforting bowl of creamy soup combined with the earthy flavor of the mushrooms
Seafood Green Pea Soup - the soup tasted creamy and naturally sweet from the green pea with the umami from the fish adding depth to the aroma and flavor
Spaghetti Carbonara - The traditional version of carbonara is served, it is made with sliced guanciale (a type of cured meat), beaten eggs, pecorino Romano cheese, and black pepper. Order this if you haven't tried the traditional carbonara version.
Gnocchi Tartufo - there are very few restaurants in Clark and Manila that serves authentic gnocchi and Ristorante di Verona is one of those. The sauce was creamy and had the fragrant and earthy taste of truffles
Tortellini al Brodo - This is another Italian pasta dish that you might only find here at Ristorante di Verona. The tortellini are small sheets of pasta dough stuffed with minced pork, prosciutto, mortadella, and Parmesan cheese. The tortellini are then cooked in a broth made with chicken and beef meat.
Beef Lasagna - Classic Italian lasagna that is generously layered with beef. It was made extra rich with plenty of cheese. I also love the golden mozzarella crust.
Risotto ai Funghi - This my favorite risotto. The aroma and flavor of the mushrooms enhance the taste of the creamy risotto. Very simple but extremely good.
Risotto ai Fruitti di Mare - This dish will transport you to southern Italy. This risotto includes clams, mussels, squid, and shrimp while the tomato paste adds sweetness and tartness that brighten up the umami of the seafood.
4-Formaggi - This four-cheese pizza is my favorite. I particularly love the cheese crust and the intense flavor of the Gorgonzola cheese.
Mare e Monti - Literally means "sea and mountains" in English, this pizza includes shrimp and mushrooms with the mozzarella binding all the ingredients together.
Spicy Salame - A meaty pizza with slices of salami, whole preserved olives, and plenty of mozzarella cheese. The tomato paste compliments the salami.
Porchetta - The porchetta had a crispy skin, tender meat, and a fatty layer in between, just the way Italian porchetta should be. Marble potatoes and carrots on a bed of green peas cream are served on the side.
Wagyu Double Beef Burger - A premium burger with a double patty of wagyu beef served with truffle fries on the side. The grilled wagyu patty was juicy, full of flavor, tender, and had crunchy edges.
Beef Tenderloin - This for me was the highlight of my Sunday Brunch experience. I had two servings of this, it was that good. I had them cooked medium. The beef tenderloin was served with Hasselback truffle potato, carrot, asparagus, and red wine reduction sauce
Pesto Butter Chicken Supreme - A simple Italian dish of chicken fillets grilled with butter and pesto sauce. It is served with vegetable ratatouille but I would have preferred it with roasted broccoli.
Pan-Seared Salmon Filet - The salmon fat kept the meat moist and tender while the salmon skin was crispy like bacon. The salmon is served with marble potatoes, carrots, and spinach. The star anise, beurre, blanc sauce makes the salmon taste creamy, sweet, and buttery.
Cod Fish - The cod fillet is crusted with pistachio which locked in all the juices and flavors of the fish. The dish is served on top of spiced chickpeas.
Mascarpone Cheesecake - Cheesecake is a lot better when made with mascarpone. It is a lot creamier and the taste is richer. So simple yet so good.
Candied Banana Mille Feuille - The caramelized slices of banana really went well with the mille-feuille. I do prefer this to the more popular strawberry version.
Fruit Tart - A basic fruit tart topped with seasonal fruits. This one had pineapple, dragon fruit, strawberry, and orange.
Swiss Chocolate - The famous Swiss Chocolate of Swissôtel Clark is also part of the Verona Brunch Club. I don't get tired of this cake.
Free-Flow Beverage Selection
If you avail of the ₱4,888++ per person package, you will enjoy free-flowing wine, sparkling wine, beer, cocktails, and non-alcoholic beverages.

They also have a Gin & Tonic cart where you can order your customized G&T. During our visit, they have Tanqueray, Alamat, and Sirena. Choices may vary on your day of visit. They also have a wide assortment of tonic water and garnishes.
Here is my G&T with ginger ale, star anise, and black cardamom. I also had another G&T with rosemary-flavored tonic water.
I also had Negroni, a classic Italian cocktail made with gin, vermouth, and Campari. I also had the Boulevardier which is a whiskey version of Negroni.
