Nikkei Cuisine
Nikkei cuisine is neither Japanese nor Peruvian but a fusion of Peruvian and Japanese ingredients and cooking techniques. Here at DIP restaurant, they creatively blend the complex flavors of Nikkei cuisine and the freshest ingredients sourced locally in the Philippines.
Chef Daniel de la Fuente
Chef Daniel de la Fuente joined Sheraton Cebu Mactan Resort in 2022 as Chef De Cuisine responsible for the development of the menu of DIP. As a native of Peru, he ensures the authenticity and top quality of Nikkei dishes served to the guests. Chef Daniel de la Fuente has 20 years of solid culinary and hospitality experience both internationally and locally in Peru.
Dining Venues
The main dining area of the restaurant is an air-conditioned indoor space with tables that accommodate solo diners, couples, and groups.
The interior is nautical-inspired with the feature wall designed after the geometric patterns found in traditional Peruvian fabrics.
DIP also has an al fresco dining area facing the sea. With salsa music playing in the background, the view will instantly transport you to the beaches of Peru.
Located near the swimming pools is the bar area of DIP. Here, you can grab refreshing juices and delicious cocktails while munching on Nikkei makis.
Nikkei Dishes at DIP
Salmon & Honey Salad - Bed of assorted fresh greens topped with smoked salmon, garlic mushrooms, cherry tomatoes, pecan praline, freshly shaved Parmesan cheese, and drizzled with organic honey and Dijon mustard dressing.
Maki Acevichado - Maki with breaded prawns filling and spicy cream cheese, topped with sashimi grade tuna, and drizzled with “acevichado sauce”.
Classic Peruvian Ceviche - Fresh Lapu-Lapu cubed in leche de tigre (tiger’s milk) with sweet potatoes, golden sweet corn, and cancha corn.
Potato Puree, Pork Belly, Chili-Lemongrass Reduction - Fork-tender Peruvian crispy pork belly served with creamy potato puree, asparagus, and bell peppers, in a tangy-spicy Southeast Asian sauce.
Arroz con Mariscos Batayaki with Glazed Jumbo Shrimps - Nikkei version of the classic Peruvian rice with seafood (Arroz con Mariscos) topped with charred jumbo shrimp in Batayaki glaze.
Mushroom Paila - This vegetarian dish is made with rice cooked in an umami-rich mushroom broth, with asparagus, cherry tomatoes, persillade, broccoli, and white truffle aroma.
USDA Prime Tenderloin Steak - 250g steak served with potato gratin, asparagus, young corn, in yellow chili jus.
Banana-Choco-Passion Fruit - The tartness of the passion fruit breaks the sweetness of the chocolate and leaves a refreshing taste in the end.
Lemon Curd “Kinda” Tarte - Creamy with a mild lemony flavor and exciting contrast in textures.
Thai Milk Tea Crème Brulée and Chocolate Dipped Biscuit - This is the Asian version of the Peruvian crème brulée (crema volteada).
